Meal Trains: The Easy and Yummy

Friends, let's be real... Meal Trains are the greatest, but sometimes the worst, thing ever. When I had Calvin I was so super grateful for our Meal Train and the amazing friends who signed up to bring us dinner. People bringing you meals right after having a baby is literally the greatest thing ever!

Now on to the other side of Meal Trains. I totally think signing up to deliver a meal is an amazing way to do a sweet deed for a friend in need. It’s a great invention! But I say they can be the worst only becasue when you are on the “dropping off a meal” side sometimes the date sneaks up on you, or you get busy and forget, or you have no idea what to cook!

Incase you’ve ever been in that panicked state, as I have many times… here are my three favorite go-to meals!

Instant Pot Shredded Chicken Tacos
Throw 2 frozen chicken breasts, about 1/2 box of Organic Chicken Broth, your favorite chicken seasoning to taste (here's mine, sorry about the name haha) into the Instant Pot. Set it for about 23 minutes on manual. 23 minutes later you’ll have delicious, juicy chicken that is super easy to shred with a knife and fork. Throw that into a disposable Tupperware.
Heat up some black beans, make a little rice then toss those into disposable Tupperware.
Pick up an avocado, small pack of tortillas, small bag of cheese, and a small sour cream from the store on the way to drop off the meal.
Easy, simple and with a homemade touch.
Tasty and done!

One Pot Chili
Brown one package of ground beef or ground turkey in a large pot.
Add 1 box of Organic Chicken Broth to the pot.
Then I throw in whatever else I have in the pantry... I like to do 1 small can of tomato paste, 1 can of Rotel, 2 cans black beans (rinsed), 1 can of kidney beans (rinsed) then season to taste (here is my favorite).
Swing by the store for a few toppings on your way to drop it off. I tend to grab cheese, avocado, onion, Fritos - whatever chili toppings you think they'd like.
Tasty and done, again with that nice homemade touch!

HEB Meal Simple
Okay I know this one is cheating. But some times you really need a fast, easy option! And HEB Meal Simple is just so easy and has so many options! They are more-or-less healthy and can be picked up on your way to dropping off the dinner. I like to grab a chicken entree, a bag salad, one side and some cute cookies for dessert. Its also great for the people receiving the meal too, because if they don’t want to eat it that night, they can throw it all in the fridge until you're ready to eat it another day.
Tasty and done!
